Chicken Korma Mughlai

Ingredients

  • 1 kg bone-in chicken pieces
  • 1 cup full-fat yogurt
  • 1/2 cup cashew paste
  • 2 large onions, finely sliced
  • 4 tbsp ghee
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 4 green cardamom pods
  • 2 bay leaves
  • 1 cinnamon stick
  • 1/4 cup cream
  • 2 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate chicken in yogurt, ginger-garlic paste, and half the garam masala for 2 hours, ensuring each piece is thoroughly coated.
  2. Heat ghee in a heavy-bottomed pan, add whole spices and let them sizzle until fragrant, releasing their essential oils.
  3. Caramelize onions until golden brown, stirring constantly to prevent burning.
  4. Add marinated chicken and cook on medium-high heat until it starts releasing its juices.
  5. Reduce heat, cover and simmer for 20 minutes, allowing chicken to cook gently.
  6. Stir in cashew paste and cream, creating a rich, smooth sauce.
  7. Adjust seasoning and cook for additional 10 minutes until chicken is tender.
  8. Garnish with fresh cilantro and serve hot with naan or fragrant basmati rice.
