Peruvian-Caribbean Seafood Paella represents a stunning culinary fusion that celebrates the coastal traditions of two remarkable Latin American cultures. Ingredients

  • 2 cups medium-grain rice
  • 1 lb mixed seafood (shrimp, calamari, mussels)
  • 1 red bell pepper, diced
  • 1 yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp aji amarillo paste
  • 1/4 cup white wine
  • 3 cups seafood stock
  • 1/2 cup frozen peas
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • 1 lime, cut into wedges

Instructions

  1. Prepare seafood by cleaning and deveining shrimp, cleaning mussels, and cutting calamari into rings. Season with salt, pepper, and paprika.
  2. Heat olive oil in a large paella pan or wide skillet. Sauté onions and garlic until translucent, approximately 3-4 minutes.
  3. Add aji amarillo paste and bell peppers, cooking for an additional 2 minutes to develop deep flavors.
  4. Pour in white wine and allow it to reduce by half, creating a rich base for the dish.
  5. Add rice and stir to coat with the aromatic mixture, toasting slightly for 2-3 minutes.
  6. Gradually pour in seafood stock, stirring gently to distribute ingredients evenly.
  7. Arrange seafood on top of the rice, ensuring even distribution. Do not stir after this point.
  8. Simmer on medium-low heat for 18-20 minutes until rice is tender and develops a crispy bottom layer called ‘socarrat’.
  9. Add frozen peas during the last 5 minutes of cooking.
  10. Remove from heat and let rest for 5 minutes before garnishing with fresh cilantro and lime wedges.
