Korean-Mexican Bulgogi Tacos

Ingredients

  • 1.5 lbs thinly sliced beef sirloin
  • 1/4 cup soy sauce
  • 3 tablespoons gochujang

  • 4 cloves minced garlic

  • 8 corn tortillas
  • 1 cup shredded napa cabbage
  • 1/4 cup chopped cilantro
  • 2 green onions, sliced
  • 1 lime, cut into wedges
  • 2 tablespoons rice vinegar

Instructions

  1. Combine soy sauce, gochujang, brown sugar, garlic, and sesame oil in a bowl to create marinade. Marinate beef for minimum 2 hours, preferably overnight.
  2. Heat cast-iron skillet to high heat and cook marinated beef in batches until edges are caramelized and slightly crispy.
  3. Prepare slaw by mixing napa cabbage, cilantro, green onions with rice vinegar and honey.
  4. Warm corn tortillas on griddle until slightly charred.
